My Kitchen Rules, Yes yes it does!  Belle goes into the kitchen and knocks her Kangaroo Kofta's out of the park.

My Favourite show at the moment is My Kitchen Rules. Manu and Pete when are you going to do a Kids Kitchen Rule?

Kangaroo Kofta with Taztziki

serves 4, as a starter

  • 1 (150g) onion, finely chopped

  • 1 Tbsp (7g) whole coriander seeds

  • 1 Tbsp (7g) whole cumin seeds

  • 3 Tbsp olive oil

  • 2 cloves garlic, minced

  • ½ tsp ground black pepper

  • 1 tsp salt

  • 500g kangaroo mince

  • ½ cup (60g) breadcrumbs

  • 1 free range egg

  • 3/4 bunch mint, finely chopped

  • bamboo skewers, for skewering

  • oil, for brushing

  • 200g tzatziki dip

  • 4 Roasted Beetroot

  • Red Onion Shaved

  • Coriander to Garnish

  1. Place chopped onion, cumin, coriander seed and oil in a pan and cook over medium until translucent.

  2. Place onion mix in a large mixing bowl, along with minced garlic, salt, pepper, breadcrumbs, egg, and finely chopped mint. Mix thoroughly, then take 2 Tbsp of the mix at a time, and press onto the end of 16 bamboo skewers into even sausage shapes.

  3. Heat BBQ flat plate to medium, and brush the kofta with some extra oil before cooking for approximately 6-7 minutes, turning every so often.

  4. Cut the Beetroots into chunks

  5. Place all elements on dish

  6. Serve with a side of tzatziki.
